摘要
随着世界全球化进程的推进,国与国之间联系越来越密切。
中国渐渐被世人所知,文化传播越来越广泛,其中必不可少的是饮食文化的传播。
饮食贯穿人们的日常生活,因此,中国菜名的英译就变得尤为重要。
正确的英译有助于外国人更好的理解中国菜名中蕴含的中国文化从而使其正确无误的传播。
2008年奥运会期间,北京市旅游局出台了《中文菜名英译法》的讨论稿,旨在统一规范饭店菜名的英译。
由于中西方在菜名的命名方式上存在着很大的文化差异,故中餐菜名的英译并非易事。
本文探讨了中西饮食的文化差异,指出了现今社会上广泛存在的中式菜名英译的混合问题以及原因。
最后重点讨论了中式菜名的有效翻译策略和方法。
经过深入综合分析,得出结论:
中式菜名的英译应予以足够重视,从而使中国饮食文化得到更广泛的传播。

Abstract:
Withtheadvancingofglobalizationprocess,therelationshipbetweencountriesarecloser.Chinahasbeenknowngraduallyandculturecommunicationismoreandmorewidely,oneofessentialaspectisthespreadoffoodculture.Dietthroughoutpeople’sdailylife,therefore,itismoreimportanttotranslateChinesedishes.ThecorrecttranslationhelpspeopleknowChineseculturebetterwhichcontainsinChinesedishesandspreadcorrectly.DuringtheOlympicGames2008,asetoffixedEnglishtranslationsforChinesemenushavebeenpublishedbytheBeijingMunicipalTourismBureau,aimingtounifyandstandardizetheEnglishtranslationofChinesedishes.DuetothewideculturalgapbetweenChinaandthewestintermsofthedish—namingwayitisdifficulttotranslatetheChinesedishnamesintoEnglish.ThispaperdiscusstheculturaldifferencesofdishesbetweenChinaandwestcountriesandpointoutsomecommonproblemsandreasonsoftheEnglishtranslationofChinesecuisines.Attheend,theauthorputforwardafewsuggestionsandwaysontranslationsofChinesedishes.

Chinaisacountrywithprofoundculinaryart.TheChineseareparticularaboutculinaryartsinceancienttimes.TodateChinesecuisinehasbeendevelopingforfourorfivethousandyears,itssuperbculinaryartandrichculturalconnotationmakeitthefirstclasscuisineintheworld.InChina,peoplealwayssay“peopleregardfoodastheirprimewant,andthefoodsafetyshouldbegiventhetoppriority”.Therefore,wecanseepeopleregardfoodasthefirstthingtoconcernintheirdailylife,andcookingcultureisaveryimportantpartintraditionalChineseculture.
1.2ResearchPurposeandSignificance
Sincethenameofadishisthefirstimpressiongiventoadinningpersonwhenheorshedecidestoorderadish,itisimportanttoconveyaccurateinformationtothecustomer.Asasignificantandindispensableparttoafinedish,thedishnametranslation,playsanimportantroleandfacesahighdemandraisedbytheprofoundandcomplexnatureofChinesemenusandculinaryterms.However,manyforeignerscomplainthattheyareoftenpuzzledandevenstartledbythemenuwhentheydineintheChineserestaurants,sayingtheawfultranslationsofthenamesofthedishesoftengivethemnosmallcultureshock.
Consideringthemisunderstandingcomingalongwiththeculturaldifferences,thestudyoftranslationshouldtaketheconsiderationofculture.Dietisofparamountimportancetopeoplefromallovertheworld.
Owingtothedifferentculturaltradition,theneedofpartakingfoodisdifferentforpeoplecomingfromdifferentcountries.Chinaisacountrywithasplendidcateringculturewithaverylonghistory.Chinesedishesarefamousaroundtheworld.AftertheentryintotheWTO,weshouldworkmoreonintroducingtheChinesedishesandChinesefoodculturetoexpandinternationalculturalexchange.

ThestudyofcateringtranslationismainlybasedonacomparisonbetweenEnglishdishes’namesandChinesedishes’names.ManyChinesescholarsandresearchers,suchasBaoHuinaninhisCulturalContextandLanguageTranslationhavemadeathoroughcomparisonbetweenChinesedishes’namesandEnglishdishes’namesbystickingtoitsmeaning.Generallyspeaking,mostscholarsagreethatChinesefoodshouldbetranslatedbyitscookingstyle.Thereareseveralrepresentingthesisonthisfield,includingHuangHaixiang’S“EnglishTranslationonChineseMenu”,RenJingsheng“AlsotalkabouttheSubjectonEnglishTranslationofChinesefoodandStapleFood”,DongLi“From‘thesourcelanguageculture’sChineseDishesTranslation”,LiuQingbo’sSkillsandprinciplesoftranslationonChineseStyleDishes”,XiongLiyou’s.TheChinesedishesfunctionandtranslationprocessingandLiuXuanchuan’s‘‘FoodCultureandChinesefoodCulture”etc.Butmostofthemhavesomedisadvantages,suchastheyarenotsystematicalandnotcomprehensivethoroughly.First,thepertinenceisnotgoodenough.Second,somedishesaboutthehistoryandculturehavenotmentionedclearly.Third,somedisheshavethesameChinesetranslationwhichcanmakecustomersconfused.Therefore,Itrytomakesomeresearchandwritethisthesis.
2DifficultiesifintranslatingChinesedishesintoEnglish
2.1DifferentdietculturebetweenWesternandChineseandthecharacteristicofChinesedishes
BecauseofthedifferencedietculturebetweenWesternandChina,thedishes’namingmethodsaredifferent.Inthewesternmenu,onlyhasthesimplenamesofthedishes,thenmarkthemajoringredient,minoringredientandthecookingmethods,givingsomeonethefeelingofsimpleandpractical.WhileinChinaChinesedishesareextremelyrich,andthereisvarietyofthenamesofthedishes.Chinesecookeryisveryparticularaboutthenamesofthedishes.Thenamesoftenconsistofthenametheingredient,knifeskills,cookingmethodsandcolor,aromaandflavorofthedishes.Thesedishes’characteristicsareextremelycomplexmaterials,makinguseofthematerials’color,aromaandflavor,thecharacterofcookingmethod,givingabeautifulnameinordertocatertothecustomers.Thenamesofthedishesdoesnotreflecttheingredientandthecookingmethods,buttheyarethereflectionoftheprofoundofdishes,reflectingtheuniquetraditionalChinesedietculture.

2.3Chinesepeople’spursuitofeleganceinnamingthecuisine
Thenameofadishisveryimportantforithasbothbusinessfunctionandsalesvalue.Thefunctionofacuisine’snameismainlyincludinginformationfunction,aestheticsfunctionandsocialculturalfunction.Inchina,peoplenameadishaccordingtoitsingredient,flavor,shape,coloring,times,culinaryart,place,personage,allusion,metaphor,number,etc.However,manyforeignersdonotknowourhistoricalheroes;theyevendonotknowthedifferentplaceinChina,letalonethemeaningofit.Forexample,thereisacuisinecalled“Themostdeliciousdishintheworld”.Doyouknowwhatisit?
